My husband Kevin often makes me coffee for the road. Sometimes he whips up a breakfast sandwich or wrap as well. This one with sautéed spinach and curried mayonnaise is a favorite. It keeps me going for miles and miles from one home visit in Greenwich to the next in Athens.

Ingredients:

  • Homemade sourdough bread (English Muffins are great too)
  • *Curried Mayonnaise
  • Spinach
  • Butter
  • Eggs
  • Grated cheese

Directions:

  • Toast the bread
  • Sauteé spinach lightly in a dab of butter
  • Add eggs to spinach and scramble soft
  • Add grated cheese just before eggs are done
  • Spread curried mayo on toast, add eggs, top with more toast
  • Wrap in a napkin for the road
  • Yum!
