As a midwife, I am always on the outlook for fresh, nutritious and portable protein. I love eggs and hard boiled eggs fit that ticket but cooked and peeling them is generally more work than I am willing to put up with. And it make me really irritated when the peeling eats up half of my egg!
For my birthday, I was generously gifted with an Instant Pot electric pressure cooker. Having tried rice and sweet potatoes, it was time: hard boiled (steamed actually) eggs were my next experiment.
This was the total work involved:
Got eggs out of fridge
Put eggs on trivet in Instant Pot
Added 1 cup of water to Instant Pot
Put on lid
Pressed Manual, pressed Minus sign to get to Low Pressure
Pressed Minus sign to get to 5 minutes
I waited a second and it turned itself on
Then I went upstairs to take a shower
When it was done cooking (and I was done showering), I pressed the Release Valve to do a quick release of steam
Then I lifted out the pot-liner (with the eggs in it) and filled with cold water and let them cool for about a minute
Next I peeled an egg (no nicks!), pressed it’s shiny surface into sea salt flakes, onion powder and fresh ground black pepper and I ate it.
This is undoubtedly the most delicious hard boiled egg I have ever eaten.
And it cooked in almost no time without steaming up the kitchen.
And it was easy to peel.
