Anyone who has visited my kitchen in the last six months knows that I am obsessed with my Instant Pot (and they would agree that 'obsessed' is not too strong a word). This recipe is super easy, tasty, nutritious, can be easily converted to vegetarian/vegan, and allows me to play with my Instant Pot. Yay!

(Of course, this recipe will work without an Instant Pot -just steam or roast squash until very soft. If you don't have an Instant Pot but or considering getting one, or have one but are not sure yet how to use it, check out this blog, and this list.)

Butternut Squash Soup with Walnut Gremolata

Soup Ingredients:
1 large Butternut squash, rinsed, cut into large chunks, seeds removed (I cut into a total of 4 to 6 pieces)
1 quart good quality broth (I use home made if I have it, it not Trader Joe's Organic Chicken Broth. Vegetable Broth would work just as well)
1 teaspoon salt
1/2 teaspoon pepper (I just grind a bunch of fresh pepper into the pot and don't really measure)
1 teaspoon onion powder (not onion salt, just dried onion powder. I like this one a lot!)

Gremolata Ingredients:
1/2 cup chopped walnuts
1 lemon, zest only (I used a Meyer lemon. So good...)
2 tablespoons dried parsley (of course, if you have fresh, use it!)
Pinch of Maldon Sea Salt Flakes
1 tablespoon good quality olive oil

Soup Process:
Put a steamer rack or bowl into the Instant Pot. Add 2 cups of water under rack and put butternut squash chunks onto steamer rack/into steamer bowl.
Process butternut squash for 25 minutes under high pressure, then do instant release of pressure (Also fine to do 20 minutes cooking time and then allow for natural release of pressure)
Take out butternut squash and set aside until cool enough to handle
Drain and rinse Instant Pot inner cooking pot, put back into frame
Peel skin off cooked butternut squash and put peeled flesh into Instant Pot
Add broth, salt, pepper and onion powder
Puree with immersion blender (If you don't have one, mashing and whisking will work, or, pouring into the blender of food processor will work. But really, just get one!)
Adjust seasonings (remember that there is salt in the Gremolata so go easy on the salt)
Put Instant Pot on Soup, Slow Cook, or Warm setting depending on how quickly you want to eat. Or cover inner pot and put into fridge to serve later.

Basically: steam, peel, puree, season, heat and serve

Gremolata Process:
Mix everything together

To serve soup:
Heat up, dish into bowl, top with a nice spoonful of Walnut Gremolata
